If you are on the go early in the morning, like me, making a healthy breakfast can sometimes be a challenge! Most mornings, I hit the gym early before coming back home to get ready for work. So what is a busy person to do? The good news is, if you can free up an extra 15 minutes in the morning, you can prepare a delicious healthy breakfast that will fuel you up and prepare you for your day! My kale and eggs recipe is quick, easy, tasty, and most importantly, healthy! It is made with ingredients that will most likely be in your refrigerator and pantry already, so there is no excuse that you didn’t have time to make breakfast. So it is time to pass on the pop tart or fast food drive-through and make something that will start your day in a positive way!
Quick Kale and Egg Breakfast
2-3 Leaves of chopped Kale (removed from stalk)
1/4 Green pepper chopped
1/4 small onion chopped
3 Egg whites
1 Large egg
4 oz extra lean ground turkey (optional)
Olive Oil
Salt-free seasoning (such as Mrs. Dash)
In a frying pan, heat 1-2 Tablespoons of olive oil
Add the chopped onion and green pepper and ground turkey (optional). Break down ground turkey into small pieces while cooking.
Add the chopped kale. Season with salt-free seasoning. Mix in and saute with all the ingredients, flipping occasionally so all the leaves cook evenly.
Once kale looks nearly done, add the egg whites and egg. Scramble and mix into the vegetable mixture.
Serve with a side of organic tomatoes and a slice of Ezekiel toast.
