Sweet Potatoes and Yams are some of the best choices when preparing a meal that is heavy on flavor but light on fat and calories. My roasted sweet potatoes are so simple to make and with only a few ingredients! Just because you are trying to watch your waistline does not mean that you can’t enjoy something sweet. These healthy cinnamon sweet potatoes are a great dish to make for a party or to go with just about any meal. Ground cinnamon is a great ingredient to use when you want to prepare something sweet, but without all the sugar in most sweet recipes. I find myself making a large batch of these every week because they compliment the meals I prepare. Try them with the apples and pears! They add more sweetness to the dish without adding the calories. Enjoy!
Healthy Roasted Cinnamon Sweet Potatoes
4 – Large Sweet Potatoes or Yams
1 – Small Butternut Squash
2 – Green Apples (optional)
2 – Pears (optional)
Olive Oil
Ground Cinnamon
Cut sweet potatoes into cubes (approximately 1 inch cubes). Place in a large bowl.
Peel butternut squash, and cut into 1 inch cubes. Add to the potatoes.
(Optional) Peel apples and pears and cut into cubes. Add to bowl.
Sprinkle desired amount of ground cinnamon into bowl. Toss ingredients in the bowl until everything is covered with the cinnamon and all ingredients are mixed.
Add enough olive oil to the bowl where ingredients are lightly covered after tossing. Start with 2 Tablespoons and add more if needed after tossing.
Transfer to a large 9” x 13” lasagna pan. Sprinkle a little more of the cinnamon on top.
Bake at 400 degrees for 1 hour, turning the potatoes every 15 minutes so that everything will roast evenly.
Makes a large casserole, enough to serve 8 or more people as a side dish.
