Healthy Cabbage Roll Casserole - If Tom Can Do It You Can Do It

Cabbage rolls are the type of food that I love to eat, but I never get motivated to make because of the difficulty. Preparing the cabbage and then stuffing and rolling them just right where they won’t fall apart – they always fall apart when I try to do it! There is no reason you can’t have the great taste of cabbage rolls without all the hard work involved. There is a way to not only make them with ease, but also make them very healthy. I make my unstuffed cabbage rolls using all fresh ingredients, which allows me to control the sodium that many canned ingredients come loaded with. I also use both white and red cabbage , making the served dish very attractive to the eye!

Healthy Unstuffed Cabbage Rolls

1 ½ Lbs Lean Ground Turkey (at least 93% Lean)
8 – Roma Tomatoes (or 2 cans of low sodium, diced tomatoes)
1 – Lg Head Cabbage (or 2 small heads 1-white, 1- red)
1 – Medium Onion
3-4 Cloves Garlic Minced
1 T – Granulated Garlic
1 T – Onion Powder
½ tsp – Italian Seasoning
½ tsp – Sea Salt
½ tsp – Black pepper
¼ tsp – Crushed red pepper
2 T – Olive Oil
½ cup water (if needed)

Chop onion and start to brown in a pot with the olive oil.

Add the ground turkey, break up and brown with the onion. Add the garlic.

Cut tomatoes into small cubes and add to the pot along with all the seasoning.

Chop up or shred cabbage and add to the pot. Continue to cook for 10 minutes, stirring occasionally.

Tomatoes should begin to cook down. If too dry, add a little bit of water.

Cover and cook on medium high heat for additional 15 to 20 minutes, stirring occasionally, until cabbage is soft.

Serve as prepared or over a bed of brown rice.
